Green olive oil is extra virgin olive oil that is being produced by the first harvest of unripe olives. It comes in limited quantity, since green olives can be collected only for a specific time period and only by hand.Special characteristics that give to the green olive oil its unique personality are its fruitiness, its pungency and its bitterness. It has strong antioxidant properties, since it contains a higher percentage of polyphenols than other extra virgin olive oils.
Characteristics: Extra virgin olive oil collected from the unripe olive fruit and comes in a limited quantity.It is the first olive oil of the harvest, obtained directly from hand-picked olives. It has a spirited youthful aura, characterized by bold fruity flavor, distinctive bitterness and pungency. Very rich in polyphenols, it is an excellent source of antioxidants.
